i. Biography
Jorge León is the chef and founder of Alfonsina in San Juan Bautista la Raya, Oaxaca, where he opened the restaurant in 2018 with his mother, Elvia, in the patio of his childhood home. The MICHELIN Guide says he brings experience from some of the world’s best restaurants to the tasting menu at Alfonsina, which has earned Bib Gourmand recognition. Jorge León was born in Santo Domingo Nundó and began in hospitality as a dishwasher at Casa Oaxaca before working in different areas there for three years.
