By 2010, that sequence of work became its own estate when he founded Dominio Del Águila, taking on the roles of founder, winemaker, and proprietor.

Since 2010, Jorge Monzón Pascual has worked at Dominio Del Águila in La Aguilera, Burgos, Spain, where method is not a statement but the operating standard. Manual labor remains central to the cellar, and the wines are made through hands-on work, close attention, and restraint. Among the named bottles tied to his work are Dominio Del Águila Reserva 2018 and Peñas Aladas, the top wine of the house.
