i. Biography
José Daumas is a master distiller associated with Hacienda de Chihuahua, the Mexican producer of sotol founded in 1989 by Federico Elías and José Daumas. He has an enology background from the École Nationale Supérieure Agronomique de Montpellier in France and says he previously worked with Martell, Moët & Chandon, and Larsen before contributing to Hacienda de Chihuahua’s sotol production.
