José Calleja is the chef and proprietor of Surtopía, a modern Andalusian restaurant on Calle de Núñez de Balboa 106 in Madrid. He is Sanlúcar-born and note that he opened Surtopía in 2012, building the restaurant around authentic Andalusian produce and dishes with a contemporary approach.
