i. Biography
José Kobos Cortés is a Spanish itamae and chef-owner of Ebisu by Kobos, an intimate nine-seat omakase counter located in Madrid's La Latina district. After culinary stages at Michelin-starred Spanish venues such as BonAmb and Casa Pepa, he trained in Tokyo under sushi master Norihito Endo at Ebisu Endo. He subsequently founded Ebisu by Kobos, earning inclusion in the MICHELIN Guide España and taking second place in the 2023 ITAMAE Balfegó championship.
