i. Biography
His working rule is plain: “Cooking has been part of my life for as long as I can remember.” For Jose Luis Hinostroza, that line is not branding; it is a practical measure of how long the work has been in place. The career that follows is built on exacting kitchens, technical discipline, and a return to the Mexican coast with those habits intact.
Where They Are Now
The kitchen training that shaped Jose Luis Hinostroza runs through Noma in Copenhagen, Denmark; El Celler de Can Roca in Spain; and Alinea in Chicago, Illinois, United States. In each of those rooms, the demands are different, but the standard is the same: control, timing, and the ability to make precision read as ease. That sequence gave his cooking a broad technical range without pushing it away from its center. At Arca in Tulum, Quintana Roo, Mexico, that training found a setting where coastal ingredients and contemporary technique could sit on the same plate. Jose Luis Hinostroza became chef partner there in 2015, and since 2017 he has been partner of Arca. In 2025, he also became chef partner of Hotel El Ganzo, and he is today also chef of Manat. Across those roles, the throughline is consistent: Mexican coastal cooking filtered through high-level technique, with enough restraint to keep the food legible. The work is strongest where texture and temperature do the talking. Raw preparations, citrus, spice, crudo, aguachile, ceviche, tostadas, and tacos all sit naturally inside his vocabulary, but they are handled with the discipline of a fine-dining kitchen. The point is not to soften those forms into something else; it is to keep their directness while tightening the execution.
In Their Words “Definitely the raw preparations, crudos, aguachiles, ceviches and the street-food elements like tostadas and tacos, which may look casual but are crafted with fine-dining precision.” That preference marks out a specific kind of craft: food that reads as immediate, but is built with care. In Jose Luis Hinostroza’s hands, the familiar forms of tostadas and tacos are not treated as shorthand for informality. They are disciplined compositions, made to carry clarity, balance and texture without losing their everyday appeal. “It’s rooted in Mexican coastal cuisines, shaped by travel, international technique and comfort food with an adventurous twist.” That is the operating frame for the cooking: coastal Mexican food, widened by travel and technical fluency, but still anchored in comfort. The result is not a blend for its own sake. It is a style that keeps its center while letting outside methods sharpen the edges.
