José Tamayo is an Ecuadorian culinary professional and the Executive Chef at Casa Gangotena, a Relais & Châteaux hotel restaurant in Quito, Ecuador. After studying at the Instituto Gato Dumas in Buenos Aires and gaining experience across Argentina and Ecuador, he served as Executive Chef at Finch Bay Galapagos Hotel before taking the helm at Casa Gangotena in 2020. There, Tamayo champions contemporary Cocina Mestiza, combining indigenous ingredients from Ecuador's diverse ecosystems with modern gastronomy.
