Joseph Cumm’s career began with the disciplined rigor of Johnson and Wales University, where he trained as a classical pastry chef and learned to treat pastry not simply as dessert, but as architecture, timing, and quiet patience. From that foundation, he has built a life that now moves between Lancaster and York, where teaching, ownership, and continual refinement all meet under the same sugar-spun standard of excellence. He is a Pastry Arts Instructor at the Pennsylvania School of Culinary Arts and co-owner of EdenJoes Cakery, and in both roles he remains animated by the same impulse: to keep pushing himself further in the art of sugar.
