Josh Niland

Josh Niland is an Australian chef and restaurateur best known as chef and owner of Saint Peter in Paddington, Sydney, where he has built a reputation for a whole-fish, low-waste approach to seafood cookery. He and his wife Julie Niland opened Saint Peter in 2016, later expanding the brand to include Fish Butchery and other Sydney ventures. In 2024, coverage reported that Saint Peter was moving into The Grand National Hotel in Paddington, with Niland continuing as the driving force behind the restaurant’s next phase.
