Julen Bergantiños is the chef and owner of Islares in Bilbao, a restaurant that frames its cooking as a tribute to the gastrocultural and historical heritage of northern Spain. He is a Bilbao-born cook with Galician family roots and strong ties to Islares, Cantabria, where he spent much of his childhood summers.
