i. Biography
Since 2021, Ladurée has put Julien Alvarez in charge of the pastry counter’s daily standard, and the work asks for the kind of control that a house with a long memory demands. Born in Bergerac, he brings a French sensibility that reads in the macaron as discipline before decoration: clean edges, measured fillings, and a finish that holds the piece together. Checkmate and A love of mom, the named pieces tied to his name, show the same register—structure first, then feeling, with formal restraint used as a tool rather than a constraint.
The Climb
Pastry work at the top level tends to reward consistency, and Julien Alvarez’s path shows that kind of measured rise. From 2013, he led the sweet creations at The Peninsula, where precision and presentation had to be delivered service after service without drift. In 2018, he moved to Le Bristol as lead of the sweet creations, carrying that same exactness into another exacting setting. Since 2021, he has been Head Pastry Chef of Ladurée and Executive Pastry Chef of Maison Ladurée, a pair of roles that place his technique inside a house defined by continuity as much as by reputation.
Today
The macaron remains the clearest lens on Julien Alvarez’s work at Ladurée since 2021: a small format built on shell, filling, and finish, with very little room for imprecision. That economy suits a pastry hand that favors clarity over surplus, and the result reads as a composed object rather than an ornament. Checkmate and A love of mom carry the same logic, where structure and sentiment are balanced without being crowded out by either. In 2021, he was Head Pastry Chef at Maison Ladurée, and he now serves there as Executive Pastry Chef, extending that disciplined approach across the house.
