Jürgen Gschwendtner

Jürgen Gschwendtner is an Austrian chef and kitchen director associated with Meissl & Schadn in Vienna, where he helped relaunch the restaurant’s traditional Viennese cuisine and schnitzel program. A Falstaff profile says he spent five months researching historic recipes and that he previously held chef roles at Casa Vecchia in Klosterneuburg, on the Seabourn Pride luxury ship, and for DO & CO before taking the kitchen-director role at Grand Ferdinand and Meissl & Schadn. He is a Küchendirektor and notes his involvement in the reopening of Meissl & Schadn and the reinterpretation of old Viennese cuisine.
