Kei Koo has led the kitchen at de nuit in Taipei since 2023, working in a Contemporary French register built on restraint rather than display. His own words are the clearest shorthand for the line he draws through the food: “I aim for clean, elegant flavors that are layered, not overly complex.” In practice, that puts emphasis on clarity, proportion, and control, with each element used for effect rather than volume. The French vocabulary stays pared back and precise.
The Path
French culinary training gave Koo a working grammar of precision and control, and that discipline carries through the rest of his career. The kitchens that followed asked for the same standards: exactness, consistency, and the ability to keep a style steady across service. He went on to work as chef at Amber in Hong Kong, then as chef at T+T in Taipei until 2022, before stepping into the role of Executive Chef at de nuit in Taipei from 2023. The sequence shows a craft refined by repetition and narrowed focus, with each stop strengthening the same insistence on restraint.
The Work Today
At de nuit, the Contemporary French approach is the most direct expression of Koo’s method. “Each dish appears simple but requires immense skill,” he says, and that tension sits at the center of the work: a finished plate that reads cleanly because the labor has been edited out of view. He has also said, “I have always done Contemporary French, without too many luxurious ingredients or molecular techniques, but I hope to return to the basics and present dishes that are clean, pure, but layered.” That position is consistent and legible: essentials first, technique kept tight, and complexity allowed to emerge without being broadcast.
