The Path
At Ken Forster Vineyards in Stellenbosch, South Africa, the winemaking work is bound to more than cellar practice. Training in Hotel Management at Johannesburg Hotel School in Johannesburg, South Africa, gave Ken Forrester an early grounding in the mechanics of service. From 1977 at Southern Sun, that grounding was put into practice through timing, attention, and the kind of operational discipline that is learned in the details. Ownership of Gatriles in Johannesburg, South Africa from 1982 extended that attention into the dining room, where wine, food, and service meet in direct view of the guest. Work with Bernard Germain at Château de Fesles in Loire Valley, France added another reference point in wine, widening the frame beyond South Africa while keeping the focus on craft. Since 1994, Ken Forrester has been winemaker of Ken Forrester Vineyards and co-owner of 96 Winery Road Restaurant.
