The Climb
Training at Dublin Institute of Technology and Cathal Brugha Street TUDublin gave Kenneth Culhane the kind of technical grounding that reads in the work: disciplined, exacting, and built for steady progression rather than noise. The kitchens that followed added range without changing the register, with Patrick Guilbaud in Dublin, Le Choiseul in Amboise, Loire Valley, France, and Tetsuya Wakuda's restaurant in Sydney, Australia (from 2005) each contributing a different layer to a career shaped by control, pace, and repetition done well. From 2010, Kenneth served as Sous Chef at Baxter Storey at Barclays Bank headquarters in Canary Wharf, London, England, carrying that same composure into a markedly different environment. Today he is Head Chef of The Dysart Petersham, a post that reflects accumulated time in demanding rooms: formal training, international service, and the sort of kitchen experience that supports leadership through practice rather than display.

In 2024, Kenneth Culhane sat on the other side of the pass as a guest judge for the Young Chef of the Year Finals presented by La Rousse Foods. The role placed his judgment in view and marked a shift from service to assessment, with the same technical experience now applied to the next generation.
