The Work Today

That approach matches the way Kenneth Toft-Hansen cooks at Svinkløv Badehotel, where the plate does not rely on noise or ornament. Instead, the work is structured around clarity and restraint, asking the guest to meet the food directly. FLORA DANICA WINTER, a 2019 signature work, shows that method in full. Browned celery root bone, Jerusalem artichoke, creamy mushrooms with Danish cheese, Danish rosehip and beet, roast rack of veal, kohlrabi, tarragon and smoked snail eggs, and roast veal gravy with mustard seeds and thyme leaves are set together with deliberate control. The dish builds through texture, earthiness, and exact placement, with each element contributing to a precise seasonal composition. Traceability is another part of the same discipline. Kenneth Toft-Hansen says, “I like it when we know the process from start to finish. We know where our ingredients come from, who produced them, and how they were produced.” The emphasis is on transparency and chain of custody: not only what reaches the pass, but how it got there.
