The Climb
Training at University of California, Davis (1992) set the technical frame for the years that followed. Tavakoli entered the cellar at Opus One Winery first as Laboratory Intern at Opus One Winery (1992) and then as Full-time Lab Manager (enologist) at Opus One Winery (1993–1996), a sequence that points to a grounding in precision and close reading before wine reaches the glass. He then moved to Clos Du Val Winery as Associate Winemaker at Clos Du Val Winery (1996–1999), before becoming the winemaker of the Cabernet Program at Clos Du Val Winery (1999–2004). Across those roles, Cabernet Sauvignon remains the central subject, and the progression shows the steady accumulation of judgment required to shape it with clarity. Since 2004, Tavakoli has been winemaker at Jean Edwards Cellars in St. Helena, where Cabernet remains the defining lane of the house. Jean Edwards Cellars Cabernet Sauvignon was the winery’s first wine and its original focus in Napa in 2004, and that places his work at the point where the label’s identity was being set.
