The Path
Lenny Russo built Heartland Restaurant in St. Paul around a menu that stayed responsive to the day’s deliveries. The cooking changed with what farmers brought in that morning, which meant the work began with procurement and ended with restraint. In Russo’s hands, local ingredients were carried by classic French and Italian method and technique, a way of cooking that reads as inherited practice refined in professional kitchens. Training at College and work in Minnesota kitchens gave Lenny Russo a path shaped by service, repetition, and rooms with expectations already set. From 2006, he served as executive chef at the restaurants at the Guthrie Theater in Minneapolis, MN, where the dining room sat inside one of the city’s most visible cultural addresses. Later, as founder and owner at Heartland Restaurant in St. Paul, MN, until 2016, he made seasonal change the operating rule. Heartland became the clearest expression of his point of view: grounded in local supply, alert to small shifts, and built to keep a menu moving without losing discipline. Since 2018, Lenny Russo has served as executive chef of The Commodore Bar & Restaurant and food and beverage director of Hotel Landing. The two roles show the range of the work: one rooted in kitchen precision, the other in the broader coordination of food, drink, and room-level service.

Russo continues to work through classic French or Italian technique while using local ingredients, keeping precision in contact with place.
