Liam Tomlin began at the Royal Hibernian Hotel in Dublin as a pot washer and kitchen porter, then moved through classical kitchens in European hotels and restaurants in Dublin, London, Zurich, Amsterdam and Rome. That route reads less like a ladder than a long apprenticeship in standards, where repetition and discipline formed the basis of a leadership style grounded in continuity. Restaurant ownership became the next step in that progression. Tomlin moved from chef at Restaurant 41 in Sydney to co-owner / restaurateur at Banc in Sydney in 1998, shifting from operating inside a kitchen to helping define the character of the room around it. The change widened his remit from service to the full structure of hospitality, where menu, pacing, and guest experience sit under the same discipline. A school attached to a restaurant asks a chef to do two jobs at once: cook and teach. In 2010, Liam became chef-owner of Chefs Warehouse and Cookery School, a role that holds kitchen practice and instruction in the same frame. The title signals a business built not only around production, but around the transfer of method, making technique part of the operation rather than a separate exercise. By 2016, the portfolio had expanded into co-ownership and consulting, with Chefs Warehouse Beau Constantia and Singita adding different settings to the same working vocabulary. In 2017, Chefs Warehouse at Maison followed; in 2020, Chefs Warehouse at Tintswalo Atlantic joined; and by 2022, The Bailey was also part of the group. Each addition marks an extension of the same principle: classical kitchen discipline carried into multiple sites, with ownership and advisory work used to shape how each place functions. “What makes food great isn’t showing off with multiple ingredients. It’s balance and restraint. I look at every dish we create and think, what can we take away from it?” Liam has said.
