i. Biography
Maksut Aşkar is the chef and co-founder of Neolokal, the restaurant at SALT Galata in Istanbul’s Karaköy district. Neolokal opened in 2014, and Aşkar has also been described as a partner in Foxy Nişantaşı, a local and natural wine bistro in Istanbul. He is the founder-chef of Neolokal and the person behind its modern Anatolian, sustainability-focused cuisine.
