    Marc Fontanne is the executive chef at Château de Fonscolombe in Le Puy-Sainte-Réparade, where he oversees La Table de l’Orangerie and the brasserie L’Orangerie. Official and trade sources describe him as a Provençal chef whose cooking emphasizes local products, seasonality, and short supply chains, and his work at Fonscolombe earned the restaurant its first Michelin star in 2024. Before Fonscolombe, he cooked in several star-level kitchens, including Maison Pic, Le Fond Rose, Château des Avenières under Marc Leroux, and then spent a decade with Yannick Franques on the Côte d’Azur before leading the kitchens at Le Prieuré in Villeneuve-lès-Avignon, where he also earned a Michelin star.
