Marc-Olivier Frappier is co-owner and co-chef of Mon Lapin in Montreal. He launched the original wine bar with Vanya Filipovic in 2018, and the pair bought out their Joe Beef partners in 2019 before expanding the restaurant and bringing three senior colleagues into the partnership.
