Mario Castrellón

Mario Castrellón is a Panamanian chef and founder of Grupo Maito, known for leading Maito in Panama City and helping define a contemporary Panamanian cuisine rooted in the country’s cultural diversity, territory, and local products. He opened Maito in 2010, and the restaurant became the first Central American restaurant to appear in Latin America’s 50 Best Restaurants.
