Winemaking at Dario Coos in Nimis, Italy, defines Matteo Lovo’s current practice, with Refosco dal Peduncolo Rosso as his stated specialty. That grape gives the work its sharpest outline. It is local, exacting, and difficult to reduce to a general Italian template; in Lovo’s case, it keeps the focus on Friuli and on the discipline of making a wine that carries place without excess gloss. Territory sits at the center of the way Lovo describes white wine. He has said, “The answer, I think, can somehow be given, in the case of white wines, by the territory, which gives important acidity, rather sustained acidity, and therefore wines that are also long-lived, with medium-high alcohol.” The language is technical, but the point is clear: acidity sets structure, longevity follows balance, and alcohol belongs to the equation rather than standing apart from it.
