Since 2004, Argyros has been winemaker and leader of the estate in Santorini. In 2011, he was head winemaker there, a dated milestone that sits within a longer tenure already shaped by the instruction of his grandfather in the vineyards and his father in the cellar. The work at Estate Argyros is organized around the vineyard first, with old vines at the center and manual labor doing most of the practical work. Organic farming without pesticides, mule ploughing, no irrigation, and separate handling by plot across harvesting, vinification, and aging all point to the same aim: keep each parcel readable. The method does not push for uniformity; it preserves distinction from one vine row or hillside to the next. Assyrtiko is the backbone of that approach, alongside other indigenous Santorinian varieties. Vinsanto is another defining specialty, tied to the same old-vine focus and the estate’s preference for letting vineyard character lead. Argyros puts the principle plainly: “In Estate Argyros we believe that great wine is only made in the vineyard.” That line matches the working method. Separate plot handling keeps the source material legible before blending or aging can flatten it, while dry farming and careful manual attention keep the older vines central to the estate’s identity. In practice, the family inheritance is not a slogan but a framework for how the wines are built and how their origins remain visible in the glass.
