Vineyard work before cellar work
Plot by plot, Matthew Argyros, winemaker at Estate Argyros in Santorini, keeps the fruit legible before it reaches the cellar. He has worked inside the estate since 2004, raised in Santorini with the vineyard and winery treated as one inherited system rather than two departments. His apprenticeship stayed close to family hands: his grandfather Matthew Argyros taught him in the vines, and his father Yiannis Argyros taught him winemaking in the cellar. By 2011, he was head winemaker, a dated marker inside a longer tenure that still turns on the same premise.
The estate gives him a scale unusual for Santorini, with more than 120 ha under its care and some vines over 200 years old. The size does not remove the work from the bench-side discipline of the vineyard. Argyros frames the method plainly: “In Estate Argyros we believe that great wine is only made in the vineyard.” At this address, that sentence is not decoration. It sets the order of attention, from old-vine parcels to separate handling, before blending or aging can blur the source.
Assyrtiko kept parcel by parcel
The program begins with organic farming and indigenous Santorinian varieties: Assyrtiko, Aidani, Athiri, and Mavrotragano. Assyrtiko is the backbone, especially for the still whites that carry the estate’s clearest line of acidity and volcanic restraint. Vinsanto gives the cellar another register, a dessert wine tied to the same old-vine material and the same refusal to treat origin as a general idea.
Manual labor remains part of the estate’s practical grammar. The vineyards are farmed without pesticides, without irrigation, and with mule ploughing. Harvesting, vinification, and aging are handled separately by plot, keeping one parcel from being absorbed too quickly into another. That sequence matters in a place where old vines are not a visual inheritance alone. They are the working material. Argyros’s signature wines, including Estate Argyros Cuvee Monsignori Santorini, Cuvée Palatia 2023, Cuvée Evdemon, Pure, and Estate Argyros Vinsanto First Release 2015, sit within that vineyard-led discipline.
A gravity-fed cellar in volcanic light
The winery itself is modern and gravity-fed, set among ancient vineyards in the volcanic Santorini landscape. The tasting room is spacious and quiet, with the sea visible beyond the vines, but the room does not pull attention away from the estate’s main subject. It returns the eye to the rows, to the distance between parcels, to the fact that the cellar’s polish begins outside.
In the glass, the place reads through restraint rather than theater. A tutored tasting here belongs to the same system as the harvest decisions: name the variety, name the parcel when the wine allows it, let the method do its work. Argyros’s own summary stays communal and practical: “I am proud for all the wines that we produce,” and at Estate Argyros the vineyard means Assyrtiko, Vinsanto, and the old Santorini vines around Episkopi Gonia.
