Mauricio Alvez is the chef of Awasi Iguazú in Puerto Iguazú, Misiones, Argentina, where he leads a cuisine centered on local ingredients and Guaraní culinary heritage. A profile by The Praxis Journal says he studied gastronomy in Posadas, worked in Mendoza, returned to Misiones, and rose through Awasi from chef de partie to chef.
