Kendall College gave Maxwell Robbins the technical base that would later show up in Chicago kitchens. The training sits behind the food rather than in front of it, but in Robbins’s case it remains legible in the way his cooking is described: disciplined, attentive, and confident enough to let ingredients stay recognizable.

Where They Are Now

Longman & Eagle placed Robbins in a rare position: responsible for a restaurant he had first encountered as a diner. That earlier relationship made the leadership feel intimate, not abstract. From 2018 to 2022, the work read as a practical exchange between memory and authority, with Robbins carrying the knowledge of the room into the job of running it.

Signature

Robbins’s signature dishes lean on contrast and exactness. Smoked trout brandade with brie and pickles sets smoke against richness and sharpness. Seared duck breast with matzo balls, soup jus, and thumbelina carrots brings comfort and structure into the same plate. Sturgeon with gulf shrimp, orange, and mussel bouillabaisse pushes toward briny depth and citrus lift. Across the dishes, the throughline is control: each element stays distinct while the plate holds together.

In Their Words “Lots of chefs baste their steak in thyme and butter; I don’t want my steak to taste like thyme and butter, I want it to taste like dry-aged Slagel beef.” That line states Robbins’s approach plainly. The focus stays on the ingredient’s own character, with less interest in masking it under garnish or excess technique.
