The Path
Pastry work across golf clubs, casino service, foodservice, and product development asks for the same discipline in different registers: pace, consistency, and the ability to make finished dessert read cleanly under pressure. In that lane, Meegan Roberts has built a practice that treats texture, temperature, flavor contrast, and visual composition as core technique, not garnish. Training at Shawnee High School and Hocking College gave Meegan Roberts the base that later work would test in professional kitchens where precision had to hold at scale. Those early foundations led into roles where pastry had to land with control and timing, and where improvisation only worked if the structure was already there. From 2008–2012, Meegan Roberts worked as Pastry Chef at Muirfield Village Golf Club, a position that required consistency and timing in a setting where desserts had to arrive looking effortless. The next step was Hollywood Casino Gulf Coast, where she served as Executive Pastry Chef from 2012–2015 and worked in a context shaped by scale, polish, and pace. The foodservice side of the trade followed at Sysco, where Meegan Roberts served as Culinary Specialist from 2015–2019, then at Hero Foodservice as Executive Pastry Chef from 2019–2021. Each role widened the field of application, moving her further into development, refinement, and the translation of concepts into finished product. Since 2021, she has been head of Product Innovations at Villa Dolce Gelato in Phoenix, applying that background to a role built around development and execution.
The Work Today
Product development at Villa Dolce Gelato is framed by a process that starts with reference and emotion, then is brought under control through structure. Meegan Roberts says, “I am inspired most by emotion and story.” In practice, that means the work begins with music, memory, a seasonal ingredient, or a cultural reference, and only then moves toward the technical decisions that make it readable as dessert. The craft sits in the translation from idea to plate: “From there, I translate that story into structure — balancing texture, temperature, flavor contrast and visual composition.” That approach keeps the work anchored in balance. Richness needs brightness, softness needs form, and the finished result has to carry the idea without losing clarity.
