i. Biography
Miguel Caño is a chef from Haro, La Rioja, and the founder of Nublo, a Michelin-starred restaurant in Haro that opened in 2021 in a restored 16th-century palace. He is described as a third-generation restaurateur, and before returning home to create Nublo he served as jefe de cocina at Mugaritz for seven years. Nublo’s concept centers on fire-driven cooking and the Rioja region’s culinary and wine identity.
