Miguel Cobo is the chef-owner and executive chef of Cobo Estratos in Burgos, where he leads Cobo Evolución and Cobo Tradición. He previously operated Cobo Vintage in Burgos from 2015 to 2019. Earlier in his career, he served as head chef at Hotel Restaurante El Vallés in Briviesca.
