The Climb
Le Cordon Bleu College of Culinary Arts gave Miguel Guerra a technical base that reads plainly in the rest of the record: discipline first, precision second, and advancement earned room by room. The sequence of appointments that followed—Grace in Chicago, Alter in Miami, and Bachour Bakery—shows a cook moving through different settings without losing the same core standard. Today
Mita is a vegan Latin American concept, and the point is not subtraction but placement: vegetables are treated as the main structure of the plate, not the support. That choice changes how the menu reads and how the kitchen works. The food asks vegetables to carry flavor, texture, and focus without leaning on the usual assumptions attached to plant-based cooking. The Latin American frame gives the idea its direction. Rather than presenting vegan cooking as a workaround, the restaurant uses it as a format for rethinking what vegetables can do within a specific culinary language. Under that lens, the concept becomes less about label than method, with the kitchen built around a clear and repeatable idea.
