i. Biography
Nanami Watanabe is the chief brewer (toji) at Niizawa Sake Brewery, where she was promoted at age 22 and became the youngest female toji in Japan. She joined the brewery in April 2016 and has been responsible for production at the Kawasaki Brewery in Miyagi Prefecture, guiding Hakurakusei sake production. Sources also describe her as the production-floor lead overseeing meticulous temperature and fermentation management.
