Formative stints at Bonnokaze in Sapporo, Japan and Tofuku in Sapporo, Japan gave Naoto Ishigaki a working base built on balance, texture, and restraint. Sapporo bowls carry an expectation of depth and comfort, but the useful lesson is structure rather than weight alone. In Ishigaki’s work, aroma, broth, seasoning, and finish are treated as connected decisions. That measured approach now defines his role as Executive Chef of Ramen Hayato.

The restaurant is organized around shoyu, shio, and Sapporo-influenced miso styles. Each asks for its own stock construction and seasoning balance, so the work is less about producing familiar bowls than about calibrating how broth and tare behave in separate directions. Its three central lanes are soy-sauce, salt, and miso. Shoyu depends on clarity and savory depth. Shio leaves less room for cover and requires a cleaner touch. Miso can carry more heft, but only if the bowl remains composed. In Ishigaki’s hands, those categories are not treated as one base with adjustments; each has its own architecture. The miso-based bowl remains one of Ishigaki’s defining specialties. His version balances Hokkaido-style bold richness with Osaka’s preference for layered, clean-tasting broth. The result is built for warmth and amplitude, with a finish intended not to feel heavy. Ura-Shoyu, an off-menu hidden soy-sauce bowl, sits as a quieter part of the repertoire for return visitors.
