The specialty is braised beef and noodle soup, also known there as neua tune, a classic beef and noodle soup. Its flavor is built from beef, star anise, cinnamon, black peppercorns, garlic, and ten kinds of aromatic Chinese herbs. The technique gives the dish its force. Each day, the previous day’s soup is reduced into stock, and that stock is reused to begin the same soup the next day. This perpetual-stew method makes time part of the ingredient list. The signature work is a beef soup that had been simmering for 45 years, a long-running stock that gives the restaurant’s craft its most concrete measure.
