Nick Hildebrandt is an Australian sommelier and restaurateur who co-founded Bentley Restaurant + Bar in Sydney with chef Brent Savage in March 2006. Bentley Restaurant + Bar has since closed, and Yellow was later sold to new owners, placing Hildebrandt’s role there in the former category.
