Island cooking starts with limits: weather, coastline, fields, forests and the seasonal pressure of what Bornholm can give at a given moment. Early restaurant work placed Nicolai Nørregaard inside that material reality as a staff member at Svaneke Pakhus in Svaneke, Bornholm, Denmark.
