Nicolas Boujéma

Nicolas Boujéma is a French chef who built his career in Michelin-starred French restaurants before moving to Asia, where he led Signature at Mandarin Oriental, Tokyo. He is senior Executive Sous Chef overseeing the hotel’s kitchen teams and Chef de Cuisine at Signature, while Japanese press states he began as Signature’s chef in 2013 after earlier leadership roles in Hong Kong.
