The Climb
Strasbourg Conservatory gave Nicolas Guilloton a first training in discipline, and that discipline carries through his work in kitchens and in leadership. From that base, he moved into professional kitchens and built his career step by step, learning how to stay close to the work while also directing the people doing it. That balance was tested at L'Atelier des Augustins in Lyon, France, where Nicolas Guilloton worked as chef and manager. The role required culinary direction and day-to-day oversight in equal measure, with the kind of authority that depends on attention to detail. He later became chef at La Galinette in Perpignan, France, continuing to work in kitchens where technique, service tempo and the people around the pass all shape the final plate.
