The Climb
Hospitality here starts with a legal education and ends up in retail concepts built with line-level discipline. Noah Bernamoff trained at McGill University and Brooklyn Law School, and that combination of schooling shows up in the way he approaches food businesses: structured, selective, and alert to how identity and product have to hold together. The result was not a law practice but work shaping New York counters that became part of the city’s food language. The deli format came into focus in 2010, when Noah Bernamoff became founder and co-owner of Mile End Delicatessen. In that role, the old model was not copied so much as reworked for a newer crowd, with enough reference point to read as deli and enough control to feel current. By 2014, he had widened that lane with the founding and co-ownership of Black Seed Bagels, carrying the same attention to specificity into bagel service. He is also founder of Grand Army, extending that building impulse into another named house. What runs through these projects is less spectacle than editing: choosing what stays, what gets sharpened, and what the room needs to support the food. Bernamoff’s line about his interests diverging from what was best for the deli is direct, and it reads like an operator marking the point where stewardship and fit no longer aligned. That kind of call is part of the work too.
Today
Since 2014, Noah has been founder and co-owner of Black Seed Bagels in New York City, where the business rests on a clear idea of what the bagel should be and how the shop should carry it. He is also the founder of Grand Army in Boerum Hill, Brooklyn, New York City, a second platform for the same kind of measured hospitality. The projects sit in different modes, but both depend on the same craft: keeping the offer legible, the room coherent, and the details in line. Bernamoff’s approach treats a food business as more than the item in front of the customer. Front of house, back of house, pace, and tone all matter, and he talks about the work in those terms. The result is a profile of operations that are built piece by piece, with the practical decisions doing as much cultural work as the menu.
Signature
Noah's signature dishes include Salami-and-Egg Mishmash and Pickled Red Onions. Those names point to a specific kind of restraint: familiar ingredients handled with enough exactness to register as deliberate. Salami-and-Egg Mishmash carries the weight of a breakfast dish that doesn’t need embellishment to land, while Pickled Red Onions function as the bright counterpoint that changes the shape of the bite. Both fit the same operating logic seen across Bernamoff’s work—plainspoken, edited, and attentive to how small details carry the whole.
In Their Words “We’re doing some amazing things in the back of house in addition to the well-selected grocery, local produce, and country store good vibes.” “My interests were diverging from what was best for the deli.”
