Short order cooking is where Norman Van Aken’s craft starts: on the griddle, under pressure, with tickets moving fast and no room for drift. In Libertyville, Illinois, in 1972, that diner line gave him the plain mechanics of service before any larger reputation could form. From that footing, Van Aken went on to build a career around New World Cuisine, a way of cooking that places French technique, Caribbean flavors, Latin American traditions, and American creativity in the same working vocabulary.
The Climb
In 1972, Norman Van Aken began as a short order cook at a diner, a start defined by pace, repetition, and control.
