Before Oli Marlow reached executive chef level at ION Harbour by Simon Rogan, the work was already being formed in kitchens that reward precision, pace and consistency. Bournemouth & Poole College gave the first structure, then a run through Roganic in London and other exacting rooms added the habits that define a kitchen career built on repetition, standards and progression rather than spectacle.
The Path
Training at Bournemouth & Poole College established the base. From there, Oli Marlow moved into service-heavy kitchens where detail is the currency: apprentice at Chewton Glen in Hampshire, then chef at The Fat Duck, chef at Eleven Madison Park, and chef at Maaemo in Oslo. By the time he became executive chef at Roganic London, a role he held until 2020, the line from kitchen training to leadership was clear.
