Olivier Jacquod has been winemaker at Cave de Goubing in Sierre since 2007, working from a cellar set within one of Valais’s most closely watched wine landscapes. That long run has given the name a steady place in the region: not a winemaker built on flash, but on continuity, season after season, and on a style drawn from the place itself. The wines are developed mainly from his own estate fruit, which keeps vineyard and cellar in close alignment and puts the fruit’s character at the center of the work.
