i. Biography
Ong Cheng Kee is the owner of Zai Shun Curry Fish Head in Jurong East, Singapore, a hawker stall recognized by the MICHELIN Guide. MICHELIN reports that he began working in kitchens at age 14, opened his own curry fish head stall at 20, and later moved the business from Yuhua Food Centre to its current coffee-shop location at Block 253, Jurong East Street 24. He is also listed as chef at Zhong Ji Yan Shao Fan Ya in Quanzhou and Zhuan Zhuan Hui on Lianhua South Road in Chengdu, but the evidence for those China listings is lower-confidence than the Singapore sources.
