i. Biography
Paco Méndez is a Mexican avant-garde chef and the chef-patron and co-owner of COME by Paco Méndez in Barcelona, Spain. Born in Mexico City, he trained at Ambrosia Centro Culinario before staging at elBulli under Ferran and Albert Adrià and Arzak under Juan Mari Arzak. After previously earning a Michelin star at Hoja Santa in partnership with Albert Adrià, Méndez opened COME by Paco Méndez in 2022, securing a Michelin star for his refined Mexican-Mediterranean cuisine.
