i. Biography
Paco Quirós is a Santander-born chef and restaurateur associated with Cañadío and La Maruca. Paco is the founder and leader of Grupo Cañadío. Reporting places Cañadío in Santander and Madrid, and describes La Maruca as one of the group’s Madrid restaurants, with Quirós and Carlos Crespo at the front of the expansion. He opened the original Cañadío in Santander in 1981, and later expanded the concept through additional Madrid venues including La Maruca.
