Paolo Lavezzini is the Executive Chef at Four Seasons Hotel Firenze, where he oversees the culinary direction across five outlets including the Michelin-starred Il Palagio. A native of Emilia-Romagna, he trained in European Michelin-starred kitchens and later spent 10 years in Brazil leading restaurant Neto as Executive Chef before joining Four Seasons Florence in 2021. He is described by the venue as bringing international experience to Il Palagio, where he reinterprets Italian culinary traditions with a focus on simplicity and seasonality.
