Pascal Bardet has been chef-owner of Le Gindreau in Saint-Médard, Lot, since 2013, and the work there is built on seasonality, local produce, and a clear reading of place. Bardet was executive chef at Hotel du Parc from 2003–2005, then executive chef at Hotel des Ambassadeurs in 2005–2005, before becoming Head Chef at Bar & Boeuf from 2006–2007. He then moved to Louis XV-Alain Ducasse in Monaco as Head Chef from 2007–2011, followed by a final stretch as executive chef at Hotel Belles Rives from 2011–2013.
