Il est considéré comme le porte-parole d’un art typiquement français. Pascal Dupuy etablert seg i 1995, og har siden den gang åpnet flere spisesteder man bare må besøke. Ikke bare fordi de befinner seg nær et historisk minnesmerke, men først og fremst fordi man her får den helt store matopplevelsen. Mange betrakter Pascal Dupuy som talerør for det fransk kjøkken.
