Vines are tended organically; wines see no chaptalization, acidification, or SO2 added during vinification; and bottling is done without fining or filtration. The method keeps correction to a minimum and makes patience part of the technical system. The farming and cellar work follow the same line. The domaine uses ploughing instead of weedkillers, hand harvesting, strict sorting, and limited new oak for reds and whites. Reds are fermented with whole clusters for bouquet and rich personality; whites are vigorous and powerful, built to express each vineyard's nuances. Under Essa's leadership, the wines have been balanced, concentrated, rich, pure, and expressive, combining crystalline purity with Meursault opulence. The emphasis on balance is plain in Essa's own harvest assessment: "I loved those grapes, the balance was fantastic – it's just that we had quite a low yield – we will actually have more grapes in frosty 2021!"
